About the Tea
Sencha, a high-quality green tea, is among the most popular Japanese teas, constituting up to 80% of the tea offerings in Japan itself. Sencha translates to roasted tea, referring to its cultivation method under direct sunlight. Oxidation is halted post-harvest by steaming, a process lasting 20 – 30 seconds. The lightly broken leaves are then rolled into thin, dark green needles.
Home Preparation
For brewing Sencha green tea, water temperature is crucial; for the first infusion, it should be around 80°C. Using hotter water (or oversteeping) may result in a bitter taste. Steep one teaspoon of tea (about 3g) in 250ml of water for approximately 1.5 minutes. Subsequent infusions yield a sweeter, milder flavor.
