Ethiopia is considered the country from which the coffee spread all over the world. The area around the city Yirga-cheff is one of the most famous coffee regions. Coffee is grown here at an altitude between 1700 to 2000 m and "yirgacheffee" is considered to be a special variety of Arabica. Worth mentioning is a specific way of growing coffee, typical for this and other Ethiopian coffee types. Coffee in Ethiopia, is one of the few countries, where coffee grows wild in the woods.

GHB means Good Hard Bean and marks coffee grown at an altitude between 1100 and 1200 m. In case of this coffee is allowed a maximum amount of four defects in 300 gram sample of green coffee. This coffee is blend of a mixture of varieties Caturra, Mundo Novo and Catuai. Efforts to produce a quality coffee is the reason why robusta growing is legally banned in Costa Rica. So from Costa Rica you can taste only arabica. The coffee is wet processed.

Designation Sidamo has its origin in an older designation Sidamo region, today called Oromia, where are the origines of this coffee. Sidamo is considered a special variety of Arabica. Most of this coffee is grown in orchards surrounding local houses. Gr.2 refers to the quality level, which is expressed by the number of defects in a sample of green coffee. In this case, 300 gram sample of coffee may contain maximum of twelve defects. For comparison, in the last Ethiopian quality coffee class (Gr.6), that is still intended for export, can be found up to one hundred and fifty defects.

SHG (Strictly High Grown) refers to coffee grown at an altitude over 1500 meters, in the case of our producer it is the height about 1600 meters. The body of this coffee is a blend of varieties Bourbon, Catuai, Typica and Catimor. This coffee is wet processed in the central beneficio (name for a place where coffee is processed) of cooperative. The number of defects is set by the SCAA classification, in case of this coffee it can be only eight to ten defects in 350 gram sample.

Abbreviation HB (hard bean) tells us the coffee is grown at an altitude of about 1000 meters. MCM abbreviation refers to the number of defects in coffee. In this case it must not exceed twenty-two defects in 300 gram sample. This coffee is intended for the European market. For the U.S. market is the number of defects and the coffee carries the identification MC only. A mixture of raw coffee we roast for you is created of varieties Typica, Bourbon and Caturra. The coffee is wet processed.

FLO Fairtrade® BIO arabika

This decaffeinated Arabica is based on quality coffee marked as SHG. This acronym stands for Strictly High Grown and indicates coffee grown at altitude of 1500 meters. In the title you encounter acronym CO2 that refers what way coffee was deprived of caffeine. In this method coffee is at high temperature and pressure exposed stream of carbon dioxide, that is under these conditions in the supercritical state i.e. on the borderline between gas and liquid. Carbon dioxide binds itself to caffeine.
